“As a first generation American, distanced from most of my family in Thailand, seeing the connections people make at my workplace left me feeling displaced from my culture. I asked, ‘What can I do to learn more about my roots while also finding a way to give back to the community?’ I realized that currently, there are no coffee shops in the Seattle area offering Thai coffee and its culture. I want to support people’s curiosity for Southeast Asian culture by offering an authentic experience from my background for the Seattle community to explore.”

When You Feel Ready For Something New...

Wait, but what even is a nudibranch?

Nudibranchia (pronounced new-dih-brank) are tiny, technicolored, bedazzled sea slugs known for their various whimsical shapes and cartoonish colors. These miniature ocean clowns symbolize exploration, surprise, and unique beauty in unexpected places.

In the same way, our café is designed to surprise and delight. It’s a fitting name for a space that invites you to try something new and feel right at home doing it. You’ll see loads of these little guys around the café.

We’re bringing this space to life in our hometown of Seattle, Washington. With your support, we’ll open our doors in October 2025.

Why Thai Coffee?

Thai coffee is still rare in the U.S. but is part of a healthy and growing global market. 

With direct relationships to farmers in Chiang Rai, our café will be the first and only shop in the U.S. to feature our unique beans. These beans are sourced ethically, roasted locally, and brewed expertly with love. Our Thai partners take great pride in their product and are excited to introduce their passion to you all.

We provide a natural path to support a local business by building a work culture that is fair and ethical for everyone involved, from the local farmer in Thailand to the in-store team of baristas. Our aim is to represent the highest standards in hospitality through a world-class customer experience, and we believe that the best way to accomplish this is to treat our people incredibly well every step of the way.

We learned some tricks in Thailand and discovered drinks we don’t traditionally experience in the States. At Nudibranch Coffee, you’ll see new brewing methods, fruit-infused coffee, and unique chocolates, vanillas, and teas. Specialty drinks like the Butterfly Pea Matcha and Milo Mocha will pair with local pastries and Thai-inspired experiences. This is not your traditional coffee shop. This is a place to be surprised.

We’ve noticed something. Seattle has few opportunities to casually and affordably connect with others. By surveying our community, we confirmed that this is a common feeling amongst Seattleites.

We thought to ourselves, “What can we do about this?” We open the doors of Nudibranch Coffee not only to offer great drinks, but also to organize events and give our community members accessible opportunities to meet each other. Our vision is to incentivize Seattleites to come out and get involved in activities that feel authentic and neighborly.

These experiences will be designed to recognize our most fundamental human need: connection. This enriching space goes far beyond our delicious coffee and tea beverages.


Our event roster will include 30+ unique group activities to attend. We all need a good excuse to try something new and meet some fun people!
